My Zucchini Is Bigger Than Yours

I wish I could explain to you just how exciting it was to pick food from our very first garden (check out the first garden post here). Kind of crazy that I didn’t even know how the various things would mature, grow and produce vegetables. Literally no gardening knowledge (AT ALL!), some organic soil, water and sunshine is all it took. The best part was getting the kids in on the action and having them excited about eating healthy. Heck, it even made me wanna cook.

Look it our little tomatoes, with all their promise.

Our harvest. YUM! The green pepper we chopped up right away and zucchini we saved for dinner.

Quinn ate the entire green pepper. All I got was a nibble.

For dinner we made whole wheat linguine. Easier for the kids to pick up then regular old spaghetti We are really fancy like that and that is how we roll. Then we chopped up that zucchini and threw it in the pot with our sauce and let it simmer.

It was seriously delicious and kids gobbled it up. Yes, I say kids, since I have two. Somehow one only worked his way into all the photos. Eleanor was most likely napping, but I promise you she enjoyed this meal. The girl loves to eat!

Ross and I thoroughly love patting ourselves on the back. If we got a dollar for every time we said, “Man, this zucchini is bigger than the zucchini’s you can buy in the store” we would be rich have like ten dollars. For reals. Doesn’t take a whole lot to get us going around here.

If you have been around the blog for a while you probably know I don’t so much like cooking. I love eating though. I want to like cooking, I do, but I am just so lazy. By the time 5 o’clock rolls around I am done. I just want to be fed. This probably makes me a lesser mom or woman or both. I dunno. But WHEN we win the lottery I am hiring a chef, for sure. The cool thing about the garden is I get all hyped to use my vegetables. I have another zucchini that will be ready any day now and I am already brainstorming what I am going to do with it.

So the above dinner…see how simple it is? That is how I roll. If you have awesome recipes for garden vegetables please share. I have zucchini, squash, cucumbers, tomatoes, and peppers (maybe, the peppers aren’t looking so hot). Yes, pun intended. So show me how you roll! Or drop a line and tell me all about your garden. It will be like the gardening club I never had.

Hi, I'm Megan--the crazy mom of three behind this blog. Please don't be intimidated by the name. Note it doesn't say BALANCED Home. We hardly have it all together, but together we have it all. Or at least that is what I tell myself. I love rearranging, decorating, creating, crafting, celebrations, family, and holidays. I share a little bit of all of that and more on Balancing Home. I am married to my college sweetheart (Is that a thing? Well now it is.) and he is a very talented designer. I use him for his skills so I can offer up sweet printables to all of you. We have tons of zucchini and I have been making zucchini bread and shredding it and freezing it. I made a dish the other night that was so good. I tossed the zucchini with onions and cherry tomatoes in zesty italian dressing. I then grilled them on a grill pan on top of the stove ( you could use your grill, but the grill top was easier.) Cook the zucchini first then add onions and tomatoes at the end. I cooked elbow pasta, drained added some butter, parmesan cheese, olive oil and red pepper flakes. Then toss in the vegetables. Top with more cheese. I also added some garlic to the vegetables just as they finished cooking. Salt and pepper and you have a great meal. You can keep it lighter and omit the butter or just use a small amount. Enjoy
